Chicken liver and spinach porridge

The cheapest, densest iron source there is, for preventing anaemia in the second half of the first year.

Published

A baby’s iron stores run out around 6 months, and chicken liver provides haem iron, the most absorbable kind, far more effective than spinach alone. A small portion 2 to 3 times a week is enough.

Texture: coarse mash.

Ingredients

  • 2 tbsp rice
  • 30 g chicken liver
  • a handful of young spinach leaves
  • 250 ml chicken broth
  • 1 tsp coconut oil
  • a small piece of tomato

Steps

  1. 1

Soak the liver in lime juice for 10 minutes and rinse.

  2. 2

Simmer rice in broth 30 minutes.

  3. 3

Add liver and tomato for the last 10 minutes and spinach for the last 3.

  4. 4

    Mash coarsely with a fork.

  5. 5

    Stir in the oil.
